Not sure if you caught my live video today, but I showed you all how to make a sugar-free, high fiber “Chocolate Chip Cookie Pie” that even kids love.

Here’s the recipe...
CHOCOLATE CHIP COOKIE PIE
adapted from Chocolate Covered Katie’s “Makeout Pie”
Ingredients:
2 small or 1 large can of garbanzo beans drained and rinsed thoroughly
1 cup almond meal/flour
3 tbsp ghee or other oil
1 cup applesauce
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
splash vanilla
shake or grate of nutmeg
1/3-1 cup sweetener (I used monkfruit - taste and add bit by hit)
nutella or other nut spread (optional - I used almond butter with some chocolate chips melted in)
stevia sweetened chocolate chips (like Lily’s brand)
Instructions
preheat oven to 350 F
grease a pie pan
put the first 10 ingredients into a food processor or blender and pulse until combined and smooth
put half of the mixture in the pan, add nut spread then top with the other half
add plenty of chocolate chips to the top
bake 35 minutes in metal pan and 45 in glass bottomed pan (monitor for burning!)
let cool all the way before serving
