A Perfect Winter Vegetable

Today I was part of the best upsell I’ve ever witnessed at a farmers market. Seriously the folks at Cargile Farms in Mexia, TX (bonus points if you know to pronounce that meh-hee-ya) know what they are doing.


I walked away with dill, cilantro, arugula, carrots, lettuce, spinach, another type of lettuce, chow chow, jalapeño relish and a poop ton of turnips for only $40!


Now, there is a reason that turnips are prevalent this time of year. FULL of immune boosting vitamin C and fiber during a time when fresh veggies weren’t, traditionally, as readily available. So, while this is the perfect veggie….


Aside from saving the greens and cooking them up I have NO FREAKING CLUE about what to do with turnips. So I did what any self-respecting woman would do and googled about 40 recipes until I found one 3 that I had some of the ingredients for and 8 combined them.


And this is my contribution to the internet and hopefully a saving grace for another person who got over excited at the farmers market and ended up with a ton of turnips.


Bonus facts about turnips: full of fiber and vitamin C (can’t beat that in cold season)


So without further ado… ROASTED TURNIPS


1) Start with some turnips.




2) Preheat oven to 425 F


3) turnips - Peel ‘em, dice ‘em and put ‘em in a bowl.


4) add oil of choice (we used bacon drippings and I swear you should do nothing less), onion powder, garlic powder, salt and pepper


5) spread them on a baking sheet





6) cook 30 min or until fork tender


7) eat!
