Cut the sugar, but don’t skip dessert!

Not sure if you caught my live video today, but I showed you all how to make a sugar-free, high fiber “Chocolate Chip Cookie Pie” that even kids love.

CHOCOLATE CHIP COOKIE PIE

adapted from Chocolate Covered Katie’s “Makeout Pie”

Ingredients:

  1. 2 small or 1 large can of garbanzo beans drained and rinsed thoroughly

  2. 1 cup almond meal/flour

  3. 3 tbsp ghee or other oil

  4. 1 cup applesauce

  5. 1/2 tsp baking soda

  6. 2 tsp baking powder

  7. 1/2 tsp salt

  8. splash vanilla

  9. shake or grate of nutmeg

  10. 1/3-1 cup sweetener (I used monkfruit - taste and add bit by hit)

  11. nutella or other nut spread (optional - I used almond butter with some chocolate chips melted in)

  12. stevia sweetened chocolate chips (like Lily’s brand)

Instructions

  • preheat oven to 350 F

  • grease a pie pan

  • put the first 10 ingredients into a food processor or blender and pulse until combined and smooth

  • put half of the mixture in the pan, add nut spread then top with the other half

  • add plenty of chocolate chips to the top

  • bake 35 minutes in metal pan and 45 in glass bottomed pan (monitor for burning!)

  • let cool all the way before serving
